Brazilian Lemonade

A refreshing and creamy Brazilian-style limeade made by blending whole limes with water, sweetened condensed milk, and sugar. It's a uniquely sweet and tart drink, perfect for a hot day.

Ingredients
  

  • 4 medium juicy limes (preferably unwaxed and organic)
  • 1 litre cold filtered water
  • 100 g sweetened condensed milk about 1/4 of a standard can
  • 75 g caster sugar or to taste
  • A large handful of ice cubes for serving
  • Optional: Fresh mint sprigs and lime slices for garnish

Method
 

  1. Prepare the Limes: Wash the limes thoroughly under running water. Trim off the hard top and bottom ends. Cut each lime into eight pieces (cut in half lengthwise, then each half into four wedges).
  2. First Blend: Place the lime wedges and 1 litre of cold water into a high-powered blender. Secure the lid and blend on high for no more than 15-20 seconds. I find that pulsing it 5-6 times works best for me. You just want to break up the limes, not pulverise them into a smooth pulp.
  3. Strain the Mixture: Immediately pour the blended lime and water mixture through a fine-mesh sieve or a nut milk bag into a large jug or bowl. Press down gently on the solids with the back of a spoon to extract all the liquid. Discard the pulp left in the sieve.
  4. Clean the Blender: Give the blender jug a quick rinse to remove any remaining pulp. This prevents any bitter bits from getting into your final drink.
  5. Second Blend: Pour the strained lime liquid back into the clean blender jug. Add the sweetened condensed milk and caster sugar.
  6. Final Mix: Blend again for about 30 seconds, until the condensed milk and sugar are fully incorporated and the lemonade is frothy and pale green. Taste and add a little more sugar if you feel it needs it.
  7. Serve Immediately: Fill four tall glasses with plenty of ice cubes. Pour the Brazilian Lemonade over the ice, garnish with a slice of lime and a sprig of mint, and serve straight away for the best flavour.

Notes

Best served immediately as the drink can become bitter over time. Garnish with lime slices and fresh mint for a beautiful presentation.
